Easy Eggs Benedict with Hollandaise Sauce

For the recipe you will need:

  • 4 slices of smoked bacon/canadian bacon or salmon
  • 4 eggs
  • 3 egg yolks
  • 1/2 teaspoon of white vinegar
  • 1/2 cup melted butter
  • 4 tablespoons of fresh lemon juice
  • Salt and Pepper
  • 2 English muffins

How to prepare the perfect Eggs Benedict?

Tip: you will need a large muffin tin

Follow these easy steps:

  • Preheat the oven to 350 ℉ / 180 °C
  • Grease the muffin tin (not mecessary if you are using smoked bacon)
  • Place a slice of bacon on each tin and then crack an egg over each slice
  • Cover the tin with aluminium foil
  • Bake from 10 to 15 minutes (check after 10 untill the egg whites are not transparent)

Hollandaise Sauce

  • Fill the bottom of your pot with water and bring it to simmer
  • In a separate bowl whisk together 3 egg yolks with
    1/2 teaspoon of white vinegar – until well mixed
  • Put the bowl on the water pot to make a double boiler and reheat the mixture
  • Slowly put the melted better in the egg yolk mixture (little at each time), while constantly mixing it over the simmering water
  • If the sauce is too thick, add a teaspoon or two of hot water
  • Continue whisking it on the heat until the butter gets fully incorporated into the mixture
  • Remove it from the heat and add the lemon juice, salt and pepper
  • Whisk one more time!

Plating

  • Halve and toast the English muffins
  • Place the toasted English muffin half down and layer the bacon and egg cup onto the muffin, then drizzle the hollandaise sauce over it
